Corned Beef and Cabbage

Ingredients

  • 1 small bag of 'baby' carrots
  • 10 baby red potatoes, quartered
  • 1 large onion sliced pole to pole
  • 4 cups chicken broth
  • 1 large corned beef brisket with spice pack (3-4 lbs)
  • 1 can beer
  • 1 cabbage, corsely chopped

Method

  1. Line bottom of crock pot with carrots, potatoes and onion.
  2. Cover vegetables with stock
  3. Place meat on top of vegatables, fat side up
  4. Pour beer on brisket
  5. Empty brisket packet liquid on to meat
  6. Sprinkle spice pack onto brisket
  7. Set cooker on high
  8. Wait 7 hours
  9. Add cabbage
  10. Wait 1 hour

Presentation

Serves 8. Serve plain, or with sour cream and mustard.
